Labu Dangtsel
No nonsense … fresh, easy and delicious !!
Great with momos, sha bhaley, and phagsha …
Ingredients:

1 medium size Daikon
2 carrots
1 Tomato
1 small bunch cilantro
White vinegar (or juice of 1 lemon)
Salt and Pepper
Preparation:
- Peel the daikon and carrot and then julienne them – i.e. slice them thin and then slice the thin slices again sideways. If you are short on time or not skilled with the knife, then simply use a shredder.
- Cut the tomato in half and then slice thinly.
- Chop up the cilantro

- Put all the ingredients in a large bowl, add juice of 1 lemon or 2 Tablespoon white vinegar, salt and pepper to taste. Mix it up and let sit for about an hour – then its ready to serve.
